Ingredients

  • corn kernels4 cups

Method

  1. 1Warm the oil in a pot and cook the onion until translucent.
  2. 2Add ginger and garlic, stirring for about a minute until aromatic.
  3. 3Stir in the corn, coconut milk, and broth, then simmer until the corn is very tender.
  4. 4Blend most of the soup until smooth, leaving some kernels whole for texture.
