Sesame-Poached Pear Rice Custard

Ingredients

  • short-grain rice3/4 cup
  • whole milk2 cups
  • water1 cup
  • black sesame paste3 tablespoons
  • sugar1/3 cup
  • fine salt1/4 teaspoon
  • ripe pears, peeled and sliced2 medium
  • fresh ginger, thinly sliced6 slices
  • rice vinegar1 teaspoon
  • toasted sesame seeds2 tablespoons

Method

  1. 1Rinse the rice until the water runs mostly clear, then combine it with water in a small pot and simmer until the grains are very tender.
  2. 2Stir in the milk, sugar, and salt; cook gently, stirring often, until the mixture thickens to a soft custard.
  3. 3Whisk in the black sesame paste until fully marbled and glossy.
  4. 4In a second pan, simmer the pears with ginger, rice vinegar, and a spoonful of sugar until just tender and lightly syrupy.
  5. 5Spoon the warm custard into bowls and arrange the pears on top.
  6. 6Drizzle over any pear syrup and finish with toasted sesame seeds.

Tips

  • Keep the heat low once the milk is added so the custard stays smooth.
  • For a deeper flavor, let the pears cool in their syrup for 10 minutes before serving.
