Sesame Mushroom Noodle Skillet with Silky Egg Ribbons

  • rice noodles8 oz
  • mixed mushrooms10 oz, sliced
  • scallions4, sliced
  • neutral oil1 1/2 tbsp
  • garlic2 cloves, minced
  • soy sauce3 tbsp
  • rice vinegar1 tbsp
  • sesame oil2 tsp
  • eggs3 large
  • water1/4 cup
  • sesame seeds2 tbsp
  • chili crispto serve, optional

Method

  1. 1Cook the noodles according to package directions, then drain and rinse briefly.
  2. 2Whisk the eggs with water until very smooth.
  3. 3Heat the neutral oil in a large skillet over medium-high heat and cook the mushrooms until browned and their liquid evaporates, about 5 minutes.
  4. 4Add scallions and garlic and cook for 30 seconds.
  5. 5Pour in soy sauce and rice vinegar, then add the noodles and toss to coat.
  6. 6Reduce heat to medium-low, drizzle in the egg mixture in a thin stream while stirring gently to form silky ribbons, then finish with sesame oil and sesame seeds.

Tips

  • Keep the egg mixture moving gently so it sets in soft ribbons rather than large curds.
  • If your mushrooms crowd the pan, cook them in two batches for better browning.
  • A little chili crisp adds heat and crunch at the table.
