Method
- 1Cook the noodles according to package directions, then drain and rinse briefly.
- 2Whisk the eggs with water until very smooth.
- 3Heat the neutral oil in a large skillet over medium-high heat and cook the mushrooms until browned and their liquid evaporates, about 5 minutes.
- 4Add scallions and garlic and cook for 30 seconds.
- 5Pour in soy sauce and rice vinegar, then add the noodles and toss to coat.
- 6Reduce heat to medium-low, drizzle in the egg mixture in a thin stream while stirring gently to form silky ribbons, then finish with sesame oil and sesame seeds.

- Keep the egg mixture moving gently so it sets in soft ribbons rather than large curds.
