Sesame Custard Tart with Gingered Citrus Syrup

A silky sesame custard bakes in a crisp shell and gets dressed with fragrant citrus-ginger syrup.

55 min 4 Medium

Ingredients

  • prebaked tart shell, 8-inch1
  • egg yolks3
  • whole egg1
  • heavy cream1 cup
  • milk1/2 cup
  • black sesame paste3 tbsp
  • sugar1/4 cup
  • orange zest1 tsp
  • fresh ginger, finely grated1 tsp
  • orange juice1/3 cup
  • lemon juice1 tbsp
  • honey1 tbsp

Method

  1. 1Preheat the oven and place the tart shell on a baking sheet.
  2. 2Whisk egg yolks, egg, cream, milk, black sesame paste, sugar, and orange zest until smooth.
  3. 3Pour the custard into the tart shell and bake until just set with a slight wobble in the center.
  4. 4While it bakes, simmer orange juice, lemon juice, ginger, and honey until lightly syrupy.
  5. 5Cool the tart completely so the custard firms and slices cleanly.
  6. 6Drizzle each slice with the gingered citrus syrup just before serving.

Tips

  • Do not overbake the custard; the center should tremble slightly when removed from the oven.
  • Black sesame paste varies in strength, so taste the custard before baking and adjust sweetness if needed.
  • Chill the tart for the neatest slices and the cleanest texture.
