Seeded Tomato-Miso Galette with Green Herb Drizzle

Ingredients

  • all-purpose flour1 1/4 cups
  • cold vegan butter8 tbsp
  • ice water4 tbsp
  • salt1 tsp
  • tomatoes4 medium, sliced
  • white miso1 tbsp
  • ground flaxseed1 tbsp
  • mixed seeds3 tbsp
  • fresh dill1/2 cup
  • parsley1/2 cup
  • lemon juice2 tbsp
  • olive oil3 tbsp

Method

  1. 1Mix flour and half the salt, then cut in the vegan butter until the mixture resembles coarse flakes.
  2. 2Add ice water just until the dough comes together; pat into a disk and chill for 20 minutes.
  3. 3Toss the tomato slices with miso and ground flaxseed, then set them aside to release a little juice.
  4. 4Roll the dough into a rough circle, transfer to a lined baking sheet, and pile the tomatoes in the center, leaving a border.
  5. 5Fold the edges over the filling, brush the crust lightly with water, and sprinkle the exposed dough and tomatoes with mixed seeds.
  6. 6Bake at 400°F until the crust is deeply golden and the filling is bubbling, about 35 to 40 minutes.
  7. 7Blend dill, parsley, lemon juice, olive oil, and the remaining salt into a green drizzle and spoon it over the warm galette.

Tips

  • Chilling the dough keeps the crust flaky and easier to handle.
  • If the tomatoes are very juicy, let them drain in a sieve for 10 minutes before assembling.
