Seeded Olive Feta Spiral Scones

Ingredients

  • all-purpose flour1 1/2 cups
  • baking powder2 tsp
  • salt1/2 tsp
  • cold unsalted butter1/4 cup
  • plain yogurt1/2 cup
  • pitted green olives, chopped1/3 cup
  • feta cheese, crumbled1/2 cup
  • toasted sesame seeds1 tbsp
  • chopped dill2 tbsp
  • milk for brushing1 tbsp

Method

  1. 1Heat the oven to 425°F and line a tray with parchment.
  2. 2Mix flour, baking powder, and salt in a bowl, then rub in the cold butter until the mixture looks pebbly.
  3. 3Stir in yogurt, olives, feta, sesame seeds, and dill just until a rough dough forms.
  4. 4Pat the dough into a rectangle, fold it once, and pat it out again to encourage flaky layers.
  5. 5Roll into a tight log, slice into 4 thick spirals, and set them cut-side up on the tray.
  6. 6Brush lightly with milk and bake until puffed and golden, about 15 to 18 minutes.
  7. 7Cool for 5 minutes before serving warm.

Tips

  • Keep the butter cold for the best layers.
  • Chop the olives finely so the spirals hold together cleanly.
