Savory Cornmeal Plum Galette with Thyme Cheese

Ingredients
- all-purpose flour140 g

- cold butter, cubed90 g
- fine salt1/2 tsp

- plums, pitted and sliced3 medium
- goat cheese90 g
- honey1 1/2 tbsp
- fresh thyme leaves1 tbsp
- black pepper1/4 tsp
- milk for brushing1 tbsp
Method
- 1Heat the oven to 425°F (220°C). Line a baking sheet with parchment.
- 2Mix flour, cornmeal, and salt, then cut in the cold butter until pea-sized bits remain.
- 3Add ice water just until the dough comes together; form a disk and roll it into a rough circle on the parchment.
- 4Crumble goat cheese over the center, leaving a border, then layer the plum slices on top.
- 5Drizzle with honey, sprinkle thyme and black pepper over the fruit, and fold the edges of the crust inward.
- 6Brush the crust with milk and bake 22 to 26 minutes until the fruit is soft and the edges are browned.
- 7Cool slightly before slicing so the cheese settles and the juices thicken.
Tips
- Use plums that are ripe but still firm so the galette stays neat.
- A little black pepper sharpens the sweetness and makes the thyme pop.
