Rosemary Sweet Potato Hand Pies

Ingredients
- all-purpose flour1 1/2 cups

- cold butter1/2 cup
- ice water3 to 5 tbsp
- sweet potato, roasted and mashed1 cup
- maple syrup2 tbsp
- fresh rosemary, finely chopped1 tsp
- ground cinnamon1/4 tsp
- milk1 tbsp
- turbinado sugar1 tbsp
Method
- 1Preheat the oven to 400°F and line a baking tray with parchment.
- 2Mix flour and salt, then cut in the cold butter until the mixture resembles coarse crumbs.
- 3Add ice water a tablespoon at a time just until the dough comes together, then chill briefly.
- 4Stir the mashed sweet potato with maple syrup, rosemary, and cinnamon.
- 5Roll the dough and cut it into 4 rounds; spoon the filling onto one side of each round and seal into half-moons.
- 6Crimp the edges with a fork, brush with milk, and sprinkle with turbinado sugar.
- 7Bake until the pies are bronzed and crisp, about 18 to 22 minutes, then cool slightly before eating.
Tips
- Roast the sweet potato until concentrated and dry for the best filling texture.
- Vent the tops with a tiny slit if you want a little steam release.
