Method

  1. 1Toss the pears with olive oil and honey, then roast briefly until glossy and lightly caramelized.
  2. 2Whisk flour, cornmeal, baking powder, and salt in a bowl.
  3. 3In another bowl, beat yogurt, eggs, brown sugar, and lemon zest until smooth, then fold into the dry ingredients.
  4. 4Fold in the roasted pears and transfer the batter to a lined round pan.
  5. 5Mix thyme leaves with a spoonful of sugar and sprinkle over the top.
