Ingredients

  • unsalted butter1/2 cup
  • brown sugar1/2 cup
  • egg1
  • vanilla extract1 tsp
  • buckwheat flour1 cup
  • all-purpose flour3/4 cup
  • baking soda1/2 tsp
  • salt1/2 tsp
  • dried figs, chopped1 cup
  • orange juice1/4 cup
  • walnuts, chopped1/3 cup

Method

  1. 1Brown the butter in a small pan until nutty and amber, then let it cool slightly.
  2. 2Beat the butter with brown sugar, egg, and vanilla until glossy.
  3. 3Mix in buckwheat flour, all-purpose flour, baking soda, and salt to form a soft dough.
  4. 4Press two-thirds of the dough into a lined baking pan.
  5. 5Simmer figs with orange juice until thick, then spread the filling over the base and scatter walnuts on top.
  6. 6Crumble the remaining dough over the filling and bake at 350°F (175°C) until set and fragrant.

Tips

  • If the dough feels sticky, chill it for 10 minutes before pressing and crumbling.
  • The fig filling should be thick enough to mound slightly; thin filling can make the bars soggy.
