Method
- 1Heat the oven to 425°F and line a sheet pan with parchment.
- 2Whisk miso, maple syrup, rice vinegar, soy sauce, and sesame oil into a smooth glaze.
- 3Place the salmon on the sheet pan, brush generously with glaze, and roast for 10 to 12 minutes until just cooked through.
- 4Meanwhile, toss cucumber, apple, and scallion with a pinch of salt and a few drops of rice vinegar.
- 5Warm a skillet with neutral oil and sear the salmon for 30 seconds on the glaze side if you want extra caramelization, then return to the pan if needed.
