Pear-Cardamom Rye Skillet Cake

Ingredients
- all-purpose flour3/4 cup
- rye flour3/4 cup
- baking powder1 1/2 tsp
- ground cardamom1 tsp
- salt1/4 tsp
- maple syrup1/2 cup
- plain yogurt3/4 cup
- neutral oil1/4 cup
- pears, thinly sliced2
- flaked almonds1/3 cup
Method
- 1Heat the oven to 180°C and lightly oil a 20 cm skillet or cake pan.
- 2Whisk the flours, baking powder, cardamom, and salt in a bowl.
- 3In another bowl, stir together maple syrup, yogurt, and oil until smooth.
- 4Add the dry ingredients to the wet ingredients and mix just until combined.
- 5Fold in half of the pear slices, then scrape the batter into the prepared skillet.
- 6Arrange the remaining pear slices on top and scatter with flaked almonds.
- 7Bake for 30 to 35 minutes until the center springs back and the top is deeply golden.
- 8Cool for at least 10 minutes before slicing.
Tips
- Choose pears that are ripe but still firm so they keep their shape during baking.
- This cake is especially good slightly warm, when the cardamom aroma is strongest.
