Method

  1. 1Whisk the ginger, lime juice, rice vinegar, honey, fish sauce, and chili flakes in a large bowl.
  2. 2Add the daikon, pears, and cucumber, then toss gently to coat.
  3. 3Fold in the mint and cilantro just before serving so they stay lively and fresh.
  4. 4Roughly crush the peanuts and scatter them over the salad.
  5. 5Taste and adjust with a little more lime or honey depending on the sweetness of the pears.
  6. 6Serve chilled or cool.

Tips

  • Slice the pears just before mixing to keep them from browning.
  • If the daikon tastes very sharp, soak it in cold water for 5 minutes and drain well.
  • Add a few toasted sesame seeds for extra crunch if you like.
