Ingredients

  • tart shells4 small, baked
  • milk1 cup
  • pandan extract1 teaspoon
  • egg yolks2
  • sugar1/4 cup
  • cornstarch2 tablespoons
  • salt1 pinch
  • sesame seeds2 tablespoons
  • kiwi1, thinly sliced
  • mandarin segments1/2 cup
  • mint leavessmall handful

Method

  1. 1Warm the milk in a small saucepan until steaming, then whisk in the pandan extract.
  2. 2In a bowl, whisk the egg yolks, sugar, cornstarch, and salt until smooth.
  3. 3Slowly pour the hot milk into the yolk mixture, whisking constantly, then return everything to the saucepan.
  4. 4Cook over medium-low heat, stirring, until the custard thickens and bubbles gently, then remove from heat and cool slightly.
  5. 5Toast the sesame seeds in a dry pan until fragrant, then cool them.
  6. 6Spoon the custard into the tart shells and chill until set, about 20 minutes.
  7. 7Top with kiwi, mandarin segments, sesame seeds, and mint before serving.

  • Stir the custard constantly while cooking to keep it silky and prevent lumps.
  • Use fully cooled custard before filling the shells so the pastry stays crisp.
