Miso-Sesame Mushroom Ribbon Noodles

Silky noodles are coated in a savory miso-sesame sauce with tender mushrooms and crisp scallions.

Ingredients

  • thin noodles10 oz
  • mixed mushrooms, sliced10 oz
  • sesame oil1 tbsp
  • neutral oil1 tbsp
  • white miso paste2 tbsp
  • soy sauce1 tbsp
  • rice vinegar1 tbsp
  • honey1 tsp
  • scallions, thinly sliced4
  • toasted sesame seeds1 tbsp

Method

  1. 1Cook the noodles in salted water until just tender, then reserve 1/2 cup of the cooking water and drain.
  2. 2Whisk the miso, soy sauce, rice vinegar, honey, and reserved noodle water in a bowl until smooth.
  3. 3Heat the oils in a skillet over medium-high heat and sauté the mushrooms until browned and their moisture has cooked off.
  4. 4Add the noodles and sauce to the skillet and toss until every strand is glossy and coated.
  5. 5Cook for 1 minute more, then fold in the scallions and sprinkle with sesame seeds.
  6. 6Serve immediately while the noodles are silky and warm.

Tips

  • Mushrooms brown better if you leave them alone for the first minute before stirring.
  • Start with less reserved water and add more only if the sauce seems too thick.
  • A squeeze of lime can sharpen the final flavor if you want extra brightness.
