Ingredients

  • all-purpose flour260 g
  • bread flour80 g
  • fine salt1 tsp
  • cold butter, cubed180 g
  • ice water120 ml
  • black sesame paste80 g
  • white sugar40 g
  • orange zest1 tbsp
  • egg yolk1
  • milk1 tbsp
  • demerara sugar2 tbsp

Method

  1. 1Combine the flours and salt, then cut in the cold butter until the mixture forms shaggy, flattened flakes.
  2. 2Drizzle in ice water and bring the dough together without overworking; chill briefly while you prepare the filling.
  3. 3Mix black sesame paste, white sugar, and orange zest into a spreadable paste.
  4. 4Roll the dough into a rectangle, spread the sesame filling over half, fold over, and roll gently to trap thin layers.
  5. 5Cut into long strips, twist each strip several times, and place on a lined tray.
  6. 6Whisk egg yolk with milk, brush the twists, and shower with demerara sugar.
  7. 7Bake at 400°F (205°C) for 14 to 16 minutes until deeply golden and crisp; cool on a rack before serving.
