Miso Maple Seeded Tea Cake

Ingredients
- all-purpose flour180 g

- white miso25 g
- maple syrup90 ml
- neutral oil70 ml
- large eggs2
- milk80 ml
- vanilla extract1 tsp
- mixed seeds (sesame, poppy, sunflower)35 g

Method
- 1Heat the oven to 350°F (175°C). Grease a small loaf pan and line it with parchment.
- 2Whisk flour, baking powder, and salt in a bowl.
- 3In a second bowl, whisk miso, maple syrup, oil, eggs, milk, and vanilla until smooth.
- 4Add the dry ingredients to the wet ingredients and stir just until combined.
- 5Pour into the pan, then sprinkle mixed seeds and raw sugar evenly over the top.
- 6Bake 30 to 36 minutes until the top is browned and a skewer inserted in the center comes out clean.
- 7Cool for 15 minutes in the pan, then remove and slice once fully set.
Tips
- If your miso is very thick, loosen it with a spoonful of milk before whisking it in.
- Let the cake cool completely for the cleanest slices and best texture.
