  • extra-firm tofu, pressed and cubed14 oz
  • white miso paste2 tbsp
  • honey1 tbsp
  • lime juice1 tbsp
  • sesame oil1 tsp
  • mango, diced1 cup
  • butter lettuce leaves12
  • carrot, julienned1 medium
  • cucumber, diced1 cup
  • mint leaves1/4 cup
  • crushed roasted cashews1/4 cup

Method

  1. 1Whisk the miso, honey, lime juice, and sesame oil into a loose glaze.
  2. 2Sear the tofu in a lightly oiled skillet until the sides are crisp and golden.
  3. 3Pour the glaze into the pan and toss until the tofu is evenly coated and sticky.
  4. 4Arrange the lettuce leaves on a platter and fill each with tofu, mango, carrot, cucumber, and mint.
  5. 5Sprinkle with crushed cashews and serve immediately.
  6. 6Add a final squeeze of lime if you want a brighter finish.

Tips

  • Press the tofu well so it browns instead of steaming.
  • Use very ripe mango for sweetness to balance the salty miso glaze.
