Ingredients

  • all-purpose flour1 cup

  • fresh cherries, pitted and halved1 1/2 cups
  • honey2 tbsp
  • crushed juniper berries1/2 tsp
  • lemon juice1 tsp
  • cornstarch1 tsp

Method

  1. 1Preheat the oven to 375°F and lightly grease a small tart pan.
  2. 2Blend flour, ground almonds, powdered sugar, and salt, then work in the cold butter until sandy.
  3. 3Mix in the egg yolk and cold water just until a dough forms, then press it into the tart pan in an even layer.
  4. 4Toss cherries with honey, juniper, lemon juice, and cornstarch until glossy.
  5. 5Spread the cherry mixture over the pastry shell in a neat layer.
  6. 6Bake until the crust is golden and the filling is bubbling, about 25 to 30 minutes.
  7. 7Cool fully before unmolding so the layers set cleanly.

Tips

  • Crush the juniper very lightly; too much can overpower the fruit.
  • Let the tart cool completely before slicing for the cleanest layers.
