Method
- 1Preheat the oven to 375°F and lightly grease a small tart pan.
- 2Blend flour, ground almonds, powdered sugar, and salt, then work in the cold butter until sandy.
- 3Mix in the egg yolk and cold water just until a dough forms, then press it into the tart pan in an even layer.
- 4Toss cherries with honey, juniper, lemon juice, and cornstarch until glossy.
- 5Spread the cherry mixture over the pastry shell in a neat layer.
- 6Bake until the crust is golden and the filling is bubbling, about 25 to 30 minutes.
- 7Cool fully before unmolding so the layers set cleanly.
Tips
- Crush the juniper very lightly; too much can overpower the fruit.
- Let the tart cool completely before slicing for the cleanest layers.
