Herbed Sweet Potato Hand Pockets

Flaky baked pockets wrap spiced sweet potato, herbs, and creamy cheese into a golden handheld bite.

Ingredients

  • all-purpose flour2 cups
  • cold butter, cubed1/2 cup
  • salt1 tsp
  • ice water1/3 cup
  • sweet potato, roasted and mashed1 1/2 cups
  • goat cheese1/3 cup
  • green onion, finely sliced2
  • chopped parsley2 tbsp
  • smoked paprika1/2 tsp
  • egg, beaten1

Method

  1. 1Heat the oven to 400°F and line a tray with parchment.
  2. 2Rub butter into flour and salt until the mixture looks like coarse crumbs.
  3. 3Add ice water gradually and bring the dough together; chill briefly while you make the filling.
  4. 4Mix mashed sweet potato with goat cheese, green onion, parsley, and smoked paprika.
  5. 5Roll the dough and cut into 8 rounds or squares.
  6. 6Spoon filling onto half of each piece, fold over, and seal the edges with a fork.
  7. 7Brush with beaten egg and bake until deeply golden, about 20 to 25 minutes.
  8. 8Cool for 5 minutes before serving so the filling firms up.

Tips

  • Keep the butter cold for a flakier crust.
  • If the filling seems loose, stir in 1 to 2 tablespoons breadcrumbs.
