Ingredients
- all-purpose flour2 cups

- goat cheese1/3 cup

Method
- 1Heat the oven to 400°F and line a tray with parchment.
- 2Rub butter into flour and salt until the mixture looks like coarse crumbs.
- 3Add ice water gradually and bring the dough together; chill briefly while you make the filling.
- 4Mix mashed sweet potato with goat cheese, green onion, parsley, and smoked paprika.
- 5Roll the dough and cut into 8 rounds or squares.
- 6Spoon filling onto half of each piece, fold over, and seal the edges with a fork.
- 7Brush with beaten egg and bake until deeply golden, about 20 to 25 minutes.
- 8Cool for 5 minutes before serving so the filling firms up.
Tips
- Keep the butter cold for a flakier crust.
- If the filling seems loose, stir in 1 to 2 tablespoons breadcrumbs.
