Ingredients

  • buckwheat flour1 cup
  • all-purpose flour1/2 cup
  • baking powder1 1/2 tsp
  • soy milk1 1/4 cups
  • olive oil3 tbsp
  • ground flaxseed1 tbsp
  • green olives, finely chopped1/3 cup
  • dill, chopped2 tbsp
  • chives, chopped2 tbsp
  • lemon juice1 tbsp
  • plain plant yogurt1/2 cup

Method

  1. 1Whisk the flaxseed with 3 tablespoons water and let it thicken for 5 minutes.
  2. 2In a bowl, combine buckwheat flour, all-purpose flour, and baking powder.
  3. 3Stir in soy milk, olive oil, flax mixture, olives, and half the dill and chives until just combined; rest the batter for 10 minutes.
  4. 4Preheat and lightly oil a waffle iron, then cook the waffles until deeply golden and crisp.
  5. 5Mix the plant yogurt with lemon juice and the remaining dill and chives to make a bright herb topping.
  6. 6Serve the waffles hot with the herb yogurt spooned over the top.
