Hazelnut Miso Fig Hand Pies

Ingredients
- all-purpose flour2 1/4 cups
- salted butter, cold and cubed1 cup
- ice water6 tablespoons
- fine salt1/2 teaspoon
- fresh figs, chopped1 1/2 cups
- brown sugar3 tablespoons
- white miso paste1 tablespoon
- toasted hazelnuts, chopped1/2 cup
- egg yolk1
- milk1 tablespoon
Method
- 1Pulse or rub flour and cold butter together until the mixture looks like coarse crumbs, then add ice water and salt to make a rough dough.
- 2Shape the dough into a disk, chill briefly, then roll it out and cut into circles or squares.
- 3Cook figs, brown sugar, and miso in a small pan until thick and jammy, then stir in the hazelnuts.
- 4Spoon filling onto half of the pastry pieces, leaving a border for sealing.
- 5Brush edges with water, top with remaining pastry pieces, and crimp tightly with a fork.
- 6Mix egg yolk and milk, brush over the tops, and cut a small steam vent in each pie.
- 7Bake at 425°F (220°C) for 14 to 18 minutes until deeply golden and glossy.
Tips
- Let the filling cool before assembling so it does not melt the pastry.
- These are excellent warm, when the miso aroma is most subtle and balanced.
