Ingredients

  • all-purpose flour3/4 cup
  • black sesame seeds1/3 cup
  • butter, cold and cubed6 tablespoons
  • powdered sugar3 tablespoons
  • egg yolk1 large
  • heavy cream1 cup
  • milk1/2 cup
  • matcha powder1 1/2 teaspoons
  • granulated sugar1/4 cup
  • vanilla extract1/2 teaspoon

Method

  1. 1Pulse the flour, black sesame seeds, powdered sugar, and salt until finely ground.
  2. 2Cut in the butter, add the egg yolk, and press the dough just until it holds together; chill 20 minutes.
  3. 3Roll out and line four tartlet pans, then bake blind at 190°C/375°F until the edges set.
  4. 4Warm the cream, milk, sugar, matcha, and vanilla until steaming, whisking smooth.
  5. 5Temper the custard with a little hot liquid, then pour into the tart shells and bake at 160°C/325°F until just barely wobbly.
  6. 6Cool completely, then chill until the filling is fully set before serving.

Tips

  • Whisk the matcha through a sieve to prevent clumps and keep the custard smooth.
  • Do not overbake; the custard should tremble slightly in the center when removed.
