Method
- 1Rub the butter into the flour and powdered sugar until sandy, then mix in the egg yolk and ice water just until the dough forms.
- 2Chill the dough, then roll it out and press it into four small tart pans; dock the bases and chill again.
- 3Whisk together pumpkin purée, condensed milk, eggs, and five-spice powder until perfectly smooth.
- 4Fill the tart shells with the custard and bake until the centers are just set with a slight wobble.
- 5While they cool, melt the sugar in a small pan until amber, stir in sesame seeds, and spread the brittle thinly on parchment.
- 6Break the brittle over the cooled tarts and serve.
Tips
- Do not overwork the tart dough or it will shrink in the oven.
- Pull the tarts when the center still jiggles a little; carryover heat will finish the custard.
