  • glutinous rice flour1 cup

  • baking powder1/2 teaspoon
  • milk3/4 cup
  • melted butter2 tablespoons
  • five-spice powder1/2 teaspoon
  • plums, chopped2 cups
  • black tea, strong brewed1/3 cup
  • vanilla extract1 teaspoon
  • cornstarch1 tablespoon

Method

  1. 1Heat the oven to 350°F and grease 8 small tartlet or muffin cups.
  2. 2Whisk the rice flour, cocoa powder, sugar, baking powder, and five-spice powder together.
  3. 3Stir in the milk, melted butter, and half the vanilla until a thick batter forms.
  4. 4In a small pan, simmer plums with black tea and the remaining vanilla until soft, then thicken with cornstarch dissolved in a spoonful of water.
  5. 5Divide the batter among the cups, spoon the plum compote into the centers, and bake for 18 to 20 minutes until set and slightly puffed.
  6. 6Cool for 10 minutes before unmolding and serving warm or room temperature.

Tips

  • Do not overbake; mochi becomes dense rather than chewy if it dries out.
  • The compote should be thick and jammy so it stays centered in the tartlets.
