Crisp-Top Salmon with Gingered Pears and Green Bean Skillet

Ingredients
- Salmon fillets4 (5-6 oz each)
- Pear2 ripe but firm, sliced
- Green beans10 oz, trimmed
- Fresh ginger1 tbsp, finely grated
- Shallot1, thinly sliced
- Butter2 tbsp
- Olive oil2 tbsp
- White wine or water1/4 cup
- Dijon mustard1 tsp
- Honey1 tbsp
- Lemon1, juice
- Salt1 tsp
- Black pepper1/2 tsp
Method
- 1Pat the salmon very dry and season with salt and pepper.
- 2Mix honey, Dijon, ginger, and lemon juice in a small bowl.
- 3Heat 1 tablespoon olive oil in a large skillet over medium-high. Place salmon skin-side down and press gently for 20 seconds; cook until the skin is crisp and the salmon is mostly opaque, about 5 minutes. Flip briefly, then remove to a plate.
- 4Add the remaining oil, shallot, and green beans to the skillet; stir-fry 3 minutes.
- 5Add pears and cook until just browned on the edges, then splash in wine or water and simmer 1 minute.
- 6Stir in butter and the honey-ginger mixture, then return the salmon to the skillet and spoon sauce over the top.
- 7Serve immediately while the salmon skin stays crisp.
Tips
- Choose pears that are ripe but still firm so they hold their shape in the pan.
- For the crispiest skin, keep the salmon moving as little as possible during the first sear.
