Cardamom Almond Cloud Tarts with Plum Ribbon

Tender almond tarts scented with cardamom and crowned with a glossy ribbon of quick plum compote.

Ingredients

  • all-purpose flour1 cup
  • almond flour1/2 cup
  • coconut oil, chilled1/4 cup
  • maple syrup3 tbsp
  • ground cardamom1 tsp
  • plant milk3 tbsp
  • plums, sliced3
  • lemon juice1 tbsp
  • cornstarch1 tsp
  • sugar2 tbsp
  • salt1/4 tsp

Method

  1. 1Heat the oven to 375°F and lightly grease 4 small tart pans or ramekins.
  2. 2Mix the flour, almond flour, cardamom, sugar, and salt, then cut in the chilled coconut oil until the mixture resembles coarse crumbs.
  3. 3Stir in the plant milk and 2 tablespoons maple syrup just until a soft dough forms.
  4. 4Press the dough into the pans and prick the bottoms with a fork.
  5. 5Toss the plums with lemon juice, remaining maple syrup, and cornstarch, then mound them into the tart shells.
  6. 6Bake for 22 to 25 minutes until the crusts are golden and the plum tops are bubbling.
  7. 7Cool slightly before serving so the filling settles into a glossy ribbon.

Tips

  • Do not overwork the dough; a tender crust depends on minimal mixing.
  • If the plums are very juicy, add an extra half teaspoon of cornstarch.
  • These tarts are lovely warm with a spoonful of plant yogurt.
