Ingredients
- all-purpose flour1 cup

Method
- 1Heat the oven to 375°F and lightly grease 4 small tart pans or ramekins.
- 2Mix the flour, almond flour, cardamom, sugar, and salt, then cut in the chilled coconut oil until the mixture resembles coarse crumbs.
- 3Stir in the plant milk and 2 tablespoons maple syrup just until a soft dough forms.
- 4Press the dough into the pans and prick the bottoms with a fork.
- 5Toss the plums with lemon juice, remaining maple syrup, and cornstarch, then mound them into the tart shells.
- 6Bake for 22 to 25 minutes until the crusts are golden and the plum tops are bubbling.
- 7Cool slightly before serving so the filling settles into a glossy ribbon.

- Do not overwork the dough; a tender crust depends on minimal mixing.
- If the plums are very juicy, add an extra half teaspoon of cornstarch.
