Ingredients

  • scallions, sliced3

Method

  1. 1Mix grated pear, miso, black garlic, rice vinegar, soy sauce, and honey in a small bowl.
  2. 2Pat the tofu dry, season with salt, and dust lightly with cornstarch.
  3. 3Heat oil in a skillet over medium-high and sear the tofu until crisp and deeply golden on both sides.
  4. 4Reduce the heat, pour in the glaze, and simmer until it bubbles and turns shiny.
  5. 5Turn the tofu to coat every side, letting the sauce cling and lightly thicken.
  6. 6Plate the tofu, spoon extra glaze over the top, and finish with scallions and sesame seeds.

Tips

  • Use a pear that is ripe but still firm so the sauce stays bright rather than jammy.
  • If the glaze thickens too quickly, splash in a teaspoon of water to loosen it.
