Crisp Tofu and Pear Herb Lettuce Cups

Ingredients

  • extra-firm tofu, pressed and crumbled14 oz
  • pear, finely diced1 large
  • carrot, grated1 medium
  • mint leaves, chopped1/4 cup
  • cilantro leaves, chopped1/4 cup
  • lime juice2 tbsp
  • tamari or soy sauce1 1/2 tbsp
  • sesame oil1 tsp
  • romaine or butter lettuce leaves12
  • roasted peanuts, chopped1/4 cup

Method

  1. 1Heat a skillet over medium-high heat and add the crumbled tofu.
  2. 2Cook, stirring occasionally, until the tofu dries and turns lightly golden, about 6 to 8 minutes.
  3. 3Stir in tamari and sesame oil, then remove from heat.
  4. 4In a bowl, combine pear, carrot, mint, cilantro, and lime juice.
  5. 5Fold the tofu into the fruit and herb mixture.
  6. 6Spoon into lettuce leaves and finish with chopped peanuts.

Tips

  • A ripe but firm pear works best so the filling stays crisp.
  • Serve immediately to keep the lettuce leaves cold and snappy.
