  • cooked rice, cooled1 1/2 cups
  • feta cheese, crumbled1/2 cup
  • baby spinach, chopped2 cups
  • dill, chopped2 tablespoons
  • parsley, chopped2 tablespoons
  • green onion, sliced3
  • olive oil2 tablespoons
  • lemon zest1 teaspoon
  • black pepper1/2 teaspoon

Method

  1. 1Heat the oven broiler or top grill element and place a rack near the top.
  2. 2Whisk the eggs with lemon zest, black pepper, dill, parsley, and half the feta.
  3. 3Fold in the cooled rice, spinach, and green onion.
  4. 4Heat olive oil in an oven-safe skillet over medium heat and pour in the egg mixture.
  5. 5Cook without stirring until the edges set and the bottom turns golden.
  6. 6Sprinkle the remaining feta over the top and transfer the skillet under the broiler.
