Crisped Halloumi with Warm Citrus Lentil Toss

Ingredients

  • halloumi cheese, sliced8 oz
  • cooked lentils, drained2 cups
  • orange, segmented and juiced1 large
  • lemon, juiced1
  • baby arugula4 cups
  • cucumber, diced1
  • red onion, very thinly sliced1/4 small
  • olive oil2 tbsp
  • mint, chopped2 tbsp
  • salt and black pepperto taste

Method

  1. 1Whisk orange juice, lemon juice, olive oil, salt, and pepper in a large bowl.
  2. 2Add lentils, cucumber, red onion, arugula, and mint; toss gently to coat.
  3. 3Heat a dry skillet over medium-high heat and sear the halloumi slices until deeply golden on both sides.
  4. 4Spoon the warm lentils onto plates or bowls.
  5. 5Top with the crisp halloumi and orange segments, then finish with any remaining dressing from the bowl.

Tips

  • Dry the halloumi well before searing so it browns instead of steaming.
  • If your lentils are plain, season them a little more aggressively than you think they need.
