Charred Grape and White Bean Flatbread

Ingredients
- naan or other flatbread2 pieces
- red grapes2 cups
- cannellini beans, drained and rinsed1 can (15 oz)
- olive oil2 tbsp
- garlic, finely grated1 clove
- lemon zest1 tsp
- fresh thyme leaves1 tbsp
- arugula2 cups
- salt1/2 tsp
- black pepper1/4 tsp
Method
- 1Heat oven to 425°F and place the flatbreads on a baking sheet.
- 2Toss the grapes with 1 tablespoon olive oil, half the thyme, salt, and pepper, then roast for 10 minutes until blistered.
- 3Mash half the beans with the remaining olive oil, garlic, lemon zest, and a pinch of salt until spreadable; leave the rest whole.
- 4Warm the flatbreads for 2 to 3 minutes, then spread on the bean mixture.
- 5Top with the roasted grapes and whole beans, then scatter over the arugula and remaining thyme.
- 6Finish with a light squeeze of lemon juice if desired and serve immediately.
Tips
- Use seedless grapes that are firm so they blister instead of collapsing.
- A pinch of chili flakes works well if you want a little heat.
