Method

  1. 1Mix the shredded chicken with half the lime juice and a pinch of salt so the filling tastes lively.
  2. 2Combine the remaining lime juice with fish sauce and honey to make a quick dipping sauce.
  3. 3Dip one rice paper wrapper briefly in warm water until pliable, then lay it on a damp board.
  4. 4Arrange chicken, cucumber, carrot, mint, and cilantro in a tight line near the lower third of the wrapper.
  5. 5Fold the sides inward and roll tightly into a parcel, repeating with the remaining wrappers.
  6. 6Heat the oil in a skillet over medium heat and pan-fry the parcels until crisp and golden on both sides.

Tips
