  • soba noodles10 ounces

  • cucumber, julienned1 medium
  • scallions, sliced2
  • fresh basil or mint, torn1/2 cup

Method

  1. 1Cook the soba noodles until tender, then rinse under cold water and drain well.
  2. 2Stir together soy sauce, lime juice, sesame oil, and chili crisp to make a glossy dressing.
  3. 3Fold the diced peach, cucumber, scallions, and herbs into the dressing.
  4. 4Add the noodles and toss until evenly coated and chilled through.

Tips
