Ingredients

  • fine cornmeal1 cup

  • coconut milk3/4 cup
  • plant yogurt1/3 cup
  • olive oil3 tbsp
  • sugar1/3 cup
  • lime zest2 tsp
  • lime juice2 tbsp
  • shredded coconut1/3 cup
  • sesame seeds2 tbsp

Method

  1. 1Preheat the oven to 350°F and lightly oil a small baking dish.
  2. 2Whisk the cornmeal, flour, baking powder, and salt in a bowl.
  3. 3In another bowl, mix the coconut milk, plant yogurt, olive oil, sugar, lime zest, and lime juice.
  4. 4Combine the wet and dry ingredients, then stir just until no dry spots remain.
  5. 5Pour into the prepared dish and top with shredded coconut and sesame seeds.
  6. 6Bake for 30 to 35 minutes until set at the center and golden on top, then cool slightly before spooning into bowls.

Tips

  • Do not overmix; a few small lumps help keep the crumb tender.
  • Serve warm with extra coconut milk or yogurt for a softer dessert-like finish.
