Cocoa-Tahini Mugless Snack Cake Squares

A deeply flavored snack cake blends tahini and cocoa into a plush crumb with a sesame-sweet finish.

40 min 4 Chef

Ingredients

  • all-purpose flour1 cup
  • cocoa powder1/3 cup
  • baking powder1 tsp
  • salt1/4 tsp
  • egg2 large
  • tahini1/3 cup
  • brown sugar1/2 cup
  • milk1/3 cup
  • vanilla extract1 tsp
  • dark chocolate chunks1/2 cup
  • sesame seeds1 tbsp

Method

  1. 1Heat the oven to 350°F and line an 8-inch square pan with parchment.
  2. 2Whisk flour, cocoa powder, baking powder, and salt in a bowl.
  3. 3In a second bowl, beat the eggs, tahini, brown sugar, milk, and vanilla until smooth.
  4. 4Fold the dry ingredients into the wet mixture just until combined, then stir in the chocolate chunks.
  5. 5Spread the batter in the pan and sprinkle sesame seeds over the surface.
  6. 6Bake until the center springs back and a tester comes out with a few moist crumbs, about 22 to 26 minutes.
  7. 7Cool completely before slicing into squares.

Tips

  • Do not overmix; the batter should stay thick and slightly streaked before baking.
  • Cooling fully helps the sesame-tahini flavor settle and makes cleaner slices.
  • For a more dramatic finish, dust with a little extra cocoa before serving.
