Cocoa-Rye Snack Cake with Olive Oil Cherries

  • rye flour3/4 cup
  • all-purpose flour3/4 cup
  • unsweetened cocoa powder1/4 cup
  • baking powder1 teaspoon
  • egg1 large
  • milk1/2 cup
  • olive oil1/3 cup
  • brown sugar1/2 cup
  • vanilla extract1 teaspoon
  • cherries, pitted and halved1 1/2 cups
  • pinch of salt1

Method

  1. 1Heat the oven to 375°F and line a small square pan with parchment.
  2. 2Whisk the flours, cocoa, baking powder, and salt in one bowl.
  3. 3In another bowl, whisk egg, milk, olive oil, brown sugar, and vanilla until smooth.
  4. 4Fold the dry ingredients into the wet just until combined, then spread into the pan.
  5. 5Scatter cherries over the top and bake until the center springs back, about 16 to 18 minutes.
  6. 6Cool slightly before slicing so the crumb sets and the cherries stay glossy.

Tips

  • Do not overmix or the rye can make the cake dense.
  • If cherries are very tart, sprinkle a little extra sugar over them before baking.
