- cornmeal1/2 cup
- salt1/2 tsp
- cold butter, cubed1/2 cup
- cold water3 to 5 tbsp

- thyme leaves1 tsp
- milk or cream for brushing1 tbsp
Method
- 1Heat the oven to 425°F and line a baking sheet with parchment.
- 2Mix flour, cornmeal, and salt, then cut in the butter until pebble-sized crumbs form.
- 3Add cold water just until the dough comes together, then pat it into a round and chill briefly.
- 4Roll or press the dough into a rough circle on the tray and sprinkle cheddar over the center.
- 5Arrange plum slices on top, leaving a border, then scatter with brown sugar and thyme.
- 6Fold the edges up and over the fruit, brushing the crust with milk or cream.
- 7Bake until the crust is browned and the fruit is bubbling, about 25 to 30 minutes.
- 8Cool slightly before slicing so the juices settle.
Tips
- A hot oven helps the fruit caramelize instead of steaming.
- Use plums that are ripe but not collapsing for the cleanest slices.
