Cheddar Cornmeal Plum Galette

A rough-edged galette balances sharp cheddar, cornmeal crunch, and jammy plum slices in one pan.

Ingredients

  • all-purpose flour1 cup
  • cornmeal1/2 cup
  • salt1/2 tsp
  • cold butter, cubed1/2 cup
  • cold water3 to 5 tbsp
  • sharp cheddar, grated3/4 cup
  • ripe plums, sliced3
  • brown sugar2 tbsp
  • thyme leaves1 tsp
  • milk or cream for brushing1 tbsp

Method

  1. 1Heat the oven to 425°F and line a baking sheet with parchment.
  2. 2Mix flour, cornmeal, and salt, then cut in the butter until pebble-sized crumbs form.
  3. 3Add cold water just until the dough comes together, then pat it into a round and chill briefly.
  4. 4Roll or press the dough into a rough circle on the tray and sprinkle cheddar over the center.
  5. 5Arrange plum slices on top, leaving a border, then scatter with brown sugar and thyme.
  6. 6Fold the edges up and over the fruit, brushing the crust with milk or cream.
  7. 7Bake until the crust is browned and the fruit is bubbling, about 25 to 30 minutes.
  8. 8Cool slightly before slicing so the juices settle.

Tips

  • A hot oven helps the fruit caramelize instead of steaming.
  • Use plums that are ripe but not collapsing for the cleanest slices.
