Ingredients
- boneless chicken thighs, cut into chunks1 1/2 lb
- pineapple chunks2 cups
- soy sauce3 tbsp
- brown sugar1 tbsp
- lime juice2 tbsp
- garlic, minced2 cloves
- chili flakes1 tsp
- fish sauce1 tsp
- neutral oil1 tbsp
- fresh basil or cilantro1/2 cup
Method
- 1Soak wooden skewers if needed and heat a grill pan or outdoor grill to medium-high.
- 2Toss the chicken with soy sauce, brown sugar, garlic, chili flakes, fish sauce, and lime juice for 10 minutes.
- 3Thread chicken and pineapple onto skewers, alternating pieces.
- 4Brush lightly with oil and grill, turning often, until the chicken is cooked through and nicely charred, about 10 to 12 minutes.
- 5Transfer to a platter and spoon any remaining juices over the top.
