Charred Pineapple and Chili-Lime Chicken Skewers

Ingredients

  • boneless chicken thighs, cut into chunks1 1/2 lb
  • pineapple chunks2 cups
  • soy sauce3 tbsp
  • brown sugar1 tbsp
  • lime juice2 tbsp
  • garlic, minced2 cloves
  • chili flakes1 tsp
  • fish sauce1 tsp
  • neutral oil1 tbsp
  • fresh basil or cilantro1/2 cup

Method

  1. 1Soak wooden skewers if needed and heat a grill pan or outdoor grill to medium-high.
  2. 2Toss the chicken with soy sauce, brown sugar, garlic, chili flakes, fish sauce, and lime juice for 10 minutes.
  3. 3Thread chicken and pineapple onto skewers, alternating pieces.
  4. 4Brush lightly with oil and grill, turning often, until the chicken is cooked through and nicely charred, about 10 to 12 minutes.
  5. 5Transfer to a platter and spoon any remaining juices over the top.
  6. 6Scatter with herbs and serve hot.

Tips

  • If using canned pineapple, pat it dry so it chars instead of steaming.
  • Let the skewers rest for 3 minutes before serving so the juices settle.
