Ingredients
- all-purpose flour1 1/4 cups

Method
- 1Heat the oven to 400°F (200°C) and line a baking sheet with parchment.
- 2Pulse the flour, salt, and cold butter until the mixture looks like coarse crumbs; add ice water just until it forms a dough.
- 3Roll the dough into a rough 10-inch circle and transfer it to the baking sheet.
- 4Mix ground almonds, sugar, cardamom, lemon zest, and egg into a thick paste, then spread it over the dough, leaving a 1-inch border.
- 5Slice the pears into long ribbons with a peeler or mandoline and arrange them in overlapping spirals over the filling.
- 6Fold the dough edges inward, brush lightly with water, and bake for 18 to 20 minutes until the crust is deep golden.
- 7Warm the honey and brush it over the pears right after baking.
- 8Cool for 10 minutes before slicing so the filling settles.
Tips
- Use firm-ripe pears so the ribbons hold their shape.
