Brown Butter Pear Polka Loaf

Ingredients

  • all-purpose flour1 1/4 cups
  • baking powder1 tsp
  • ground cardamom1/2 tsp
  • salt1/4 tsp
  • unsalted butter1/2 cup
  • brown sugar1/3 cup
  • egg1 large
  • plain yogurt1/3 cup
  • ripe pear, finely diced1 cup
  • vanilla extract1 tsp
  • sugar for topping1 tbsp

Method

  1. 1Preheat the oven to 350°F and line a small loaf pan with parchment.
  2. 2Melt the butter in a small pan and cook until it turns golden and smells nutty, then cool for 5 minutes.
  3. 3Whisk flour, baking powder, cardamom, and salt in a bowl.
  4. 4In another bowl, whisk the brown butter, brown sugar, egg, yogurt, and vanilla until smooth.
  5. 5Fold the dry ingredients into the wet mixture, then gently stir in the diced pear.
  6. 6Scrape into the pan, smooth the top, and scatter the sugar over the surface.
  7. 7Bake until the loaf is deeply golden and a tester comes out mostly clean, about 35 to 40 minutes; cool before slicing.

Tips

  • Use a pear that is ripe but still firm so the pieces hold their shape.
  • For extra aroma, add a pinch of black pepper to the dry ingredients.
