Method
- 1Rub the butter into the flour and powdered sugar until sandy, then mix in the egg yolk and a little cold water to form a dough.

- 3Warm the cream, milk, and tea leaves together, steep, then strain the mixture.
- 4Whisk the eggs and granulated sugar, then slowly combine with the tea-infused cream to make the custard.
- 5Fill the tart shells and bake gently until the centers are just set.
- 6Simmer the plums with ginger and cornstarch until glossy, then cool slightly and spoon over the tarts.
Tips
- Do not overbake the custard; it should still have a slight wobble in the center.
- Strain the tea carefully so the custard stays silky and free of grit.
