Black Sesame Orange Olive Oil Cakelets

Ingredients

  • all-purpose flour1 1/4 cups
  • ground black sesame seeds1/2 cup
  • sugar2/3 cup
  • baking powder1 1/2 teaspoons
  • fine salt1/4 teaspoon
  • orange zest1 tablespoon
  • orange juice1/2 cup
  • olive oil1/3 cup
  • egg1
  • plain yogurt1/3 cup
  • vanilla extract1 teaspoon

Method

  1. 1Heat the oven to 350°F (175°C) and grease 4 small ramekins or a muffin tin.
  2. 2Whisk the flour, black sesame, sugar, baking powder, salt, and orange zest together.
  3. 3In another bowl, whisk the orange juice, olive oil, egg, yogurt, and vanilla until smooth.
  4. 4Stir the wet ingredients into the dry ingredients just until no dry streaks remain.
  5. 5Divide the batter between the prepared molds and tap the pan gently to settle it.
  6. 6Bake for 12 to 14 minutes until the tops spring back and the centers are just set.
  7. 7Cool for 5 minutes before unmolding and serving warm or at room temperature.

Tips

  • Do not overmix; the sesame can make the batter seem darker than it is, so stop as soon as it comes together.
  • A tiny pinch of extra orange zest on top after baking adds a fresh finish.
