Method
- 1Make the crust by rubbing butter into flour and powdered sugar until sandy, then mix in egg yolk and cold water to form a dough.
- 2Chill the dough for 20 minutes, then press it into four small tart pans.
- 3Bake the shells at 375°F for 12 minutes until lightly set.
- 4Whisk black sesame paste, milk, cream, eggs, orange zest, and salt until smooth.
- 5Pour the custard into the warm shells and reduce the oven to 325°F.
- 6Bake 20 to 25 minutes until the centers barely wobble, then cool completely before unmolding.
