How long do potatoes last?

Whole raw potatoes keep 2–3 months in a cool, dark, ventilated place, or 1–2 weeks at normal room temperature. Cooked potatoes last 3–4 days in the fridge.

Store it right

  • Keep in a paper or mesh bag, never sealed plastic.
  • Store away from onions — together they spoil faster.
  • Do not refrigerate raw: cold converts starch to sugar and darkens frying.

Signs it has gone off

  • Green skin or sprouts (cut away generously)
  • Soft, wrinkled or leaking tubers
  • Musty smell

Rescue ideas

  • Slightly soft potatoes are still fine mashed or in soup.
  • Batch-cook and freeze rösti, chips or mash.
  • Use peelings for crisps baked with olive oil and salt.
