How long do eggs last in the fridge?
Refrigerated raw eggs in the shell keep 3–5 weeks. Hard-boiled eggs last one week, and raw eggs out of the shell freeze for up to a year when beaten.

Store it right
- Keep eggs in their carton on a shelf, not in the door.
- Never wash eggs before storing — it removes the protective bloom.
- Freeze whites and yolks separately; add a pinch of salt or sugar to yolks.
Signs it has gone off
- Egg floats upright in a bowl of water
- Sulphur smell when cracked
- Pink, iridescent or green white
Rescue ideas
- Older eggs peel best — hard-boil them for salads.
- Use up several at once in a frittata or shakshuka.
- Leftover whites become meringue; yolks become custard or aioli.
