Tomato Jam Flatbreads with Smoked Date Butter and Thyme

Warm flatbreads are spread with smoky-sweet date butter and topped with fast-cooked tomato jam and herbs.

Ingredients

  • store-bought or homemade flatbreads4
  • ripe tomatoes, grated or finely chopped3 cups
  • dates, pitted6
  • butter, softened4 tablespoons
  • smoked paprika1 teaspoon
  • olive oil2 tablespoons
  • fresh thyme leaves2 teaspoons
  • red wine vinegar1 tablespoon
  • sea saltto taste
  • feta, crumbled1/2 cup

Method

  1. 1Blend or mash the dates with the softened butter and smoked paprika until smooth.
  2. 2Cook the tomatoes with olive oil and a pinch of salt over medium heat for 10 to 12 minutes until thick and jammy.
  3. 3Stir in the red wine vinegar and half the thyme, then cool slightly.
  4. 4Warm the flatbreads in a dry skillet or oven until supple and lightly blistered.
  5. 5Spread each flatbread with a thin layer of smoked date butter.
  6. 6Spoon tomato jam over the top and finish with feta and remaining thyme.
  7. 7Serve immediately while warm and fragrant.

Tips

  • If your tomatoes are very watery, simmer a few minutes longer to concentrate the flavor.
  • A tiny pinch of chili flakes adds pleasant heat without overpowering the dates.
  • These are best assembled right before serving so the flatbreads stay soft.
