Tahini Noodle Bowl with Broccolini Ribbons and Chili Pear

Ingredients

  • soba noodles8 oz
  • broccolini, trimmed1 bunch
  • pear, thinly sliced1 large
  • tahini1/4 cup
  • soy sauce2 tbsp
  • lime juice2 tbsp
  • maple syrup1 tbsp
  • garlic, finely grated1 clove
  • chili crisp1 to 2 tsp
  • sesame oil1 tsp
  • cucumber, cut into ribbons1 medium

Method

  1. 1Cook the soba according to package timing, then rinse under cool water and drain well.
  2. 2Blanch the broccolini for 1 to 2 minutes until bright green, then drain and slice into short pieces.
  3. 3Whisk tahini, soy sauce, lime juice, maple syrup, garlic, chili crisp, sesame oil, and 3 tablespoons warm water until smooth.
  4. 4Toss the noodles with half the sauce until evenly coated.
  5. 5Fold in the broccolini and cucumber ribbons, then arrange the pear slices on top.
  6. 6Drizzle with the remaining sauce and serve chilled or at room temperature.

Tips

  • Add the sauce gradually; soba can absorb more than you expect.
  • Use a ripe but firm pear so it stays crisp in the bowl.
  • If you want more protein, top with toasted edamame or a jammy egg.
