Tahini Noodle Bowl with Broccolini Ribbons and Chili Pear

Ingredients
- soba noodles8 oz
- broccolini, trimmed1 bunch
- pear, thinly sliced1 large
- tahini1/4 cup
- soy sauce2 tbsp
- lime juice2 tbsp
- maple syrup1 tbsp
- garlic, finely grated1 clove
- chili crisp1 to 2 tsp
- sesame oil1 tsp
- cucumber, cut into ribbons1 medium
Method
- 1Cook the soba according to package timing, then rinse under cool water and drain well.
- 2Blanch the broccolini for 1 to 2 minutes until bright green, then drain and slice into short pieces.
- 3Whisk tahini, soy sauce, lime juice, maple syrup, garlic, chili crisp, sesame oil, and 3 tablespoons warm water until smooth.
- 4Toss the noodles with half the sauce until evenly coated.
- 5Fold in the broccolini and cucumber ribbons, then arrange the pear slices on top.
- 6Drizzle with the remaining sauce and serve chilled or at room temperature.
Tips
- Add the sauce gradually; soba can absorb more than you expect.
- Use a ripe but firm pear so it stays crisp in the bowl.
