Ingredients
- naan flatbreads4
- canned white beans, drained and rinsed1 can (15 oz)
- olive oil2 tbsp
- garlic powder1 tsp
- smoked paprika1 tsp
- red grapes2 cups
- red onion, thinly sliced1/2
- goat cheese, crumbled3 oz
- baby arugula2 cups
- balsamic vinegar1 tbsp
- salt3/4 tsp
- black pepper1/2 tsp
Method
- 1Heat the oven to 450°F and line a sheet pan with parchment.
- 2Toss the grapes and onion with 1 tablespoon olive oil, a pinch of salt, and pepper; roast for 8 minutes.
- 3Mash the beans with the remaining oil, garlic powder, smoked paprika, salt, and a splash of water until spreadable.
- 4Spread the bean mixture over the naan and return to the oven for 4 to 5 minutes until warmed through.
- 5Top with roasted grapes, onion, and goat cheese, then bake 2 minutes more.
- 6Finish with arugula tossed in balsamic vinegar and serve immediately.
Tips
- Use the back of a spoon to create little wells in the bean spread so the toppings stay put.
- If your grapes are very large, halve them for faster roasting.
- A drizzle of honey works well if you want a sweeter contrast.
