Smoky Plum-Black Pepper Chicken with Green Beans

Ingredients

- shallot, minced1 large
- plums, pitted and chopped3 medium
- chicken broth3/4 cup
- balsamic vinegar1 tbsp
- honey1 tbsp
Method
- 1Season the chicken with salt, black pepper, and smoked paprika.
- 2Heat olive oil in a large skillet over medium-high heat and sear the chicken until browned on both sides, then transfer to a plate.
- 3Add the shallot to the skillet and cook for 1 minute, scraping up the browned bits.
- 4Add the plums, broth, balsamic vinegar, and honey; simmer until the plums break down into a thick sauce.
- 5Return the chicken and any juices to the pan and cook until the chicken is done and coated in glaze.
- 6In a separate pan or the same skillet after removing the chicken, quickly cook the green beans until bright and tender-crisp.
- 7Serve the chicken over the green beans, spooning extra sauce over the top.
Tips
- If the plums are tart, add another teaspoon of honey; if very sweet, add a splash more vinegar.
- For the best glaze, let the sauce reduce until it lightly coats a spoon.
- This also works with chicken breasts, but reduce the simmering time so they stay juicy.
